Dragonfruit Ginger Bread

This post (and the many following) is a long time coming.  My husband and I recently spent 3 weeks traveling all over Hawaii for our honeymoon.  We stayed in condos throughout the trip, and thus had our own kitchen, where I, of course, cooked up as many delicious Hawaiian-themed dishes as possible.

First, here's one for a Dragonfruit Gingerbread I made while we were staying on the Big Island.

Ingredients:
  • 2 c. Flour
  • 1 1/2 tsp. Baking Soda
  • 1 1/2 tsp. Baking Powder
  • 1 tsp. Salt
  • 1/2 tsp. Fresh Grated Ginger
  • 1 Medium Dragonfruit, mashed
  • 3 tsp. Vanilla Extract
  • 1/2 c. Nonfat Vanilla Greek Yogurt
  • 1 c. Brown Sugar
  • 1/2 c. Sugar
  • 1/4 c. Egg Substitute

Instructions:

Preheat oven to 350 and spray a 9x13 pyrex dish with cooking spray
In a medium bowl, whisk together dry ingredients (flour, baking soda, baking powder, salt)
In a large bowl, whisk together ginger, dragonfruit, vanilla, yogurt, brown and white sugar, and egg
Add the dry ingredients to the wet and stir until just combined
Pour into prepared pyrex and bake for 30-40 minutes until toothpick comes out clean

Pretty on the outside

Golden brown

Crazy delicious!
