The Sauce:
In a bowl, combine the following:
- 1/4 c. Ketchup
- 1/4 c. Reduced Sodium Soy Sauce
- 1/2 c. Chicken Broth
- 1/3 c. White Wine
- 1/4 c. Pineapple Juice
- Freshly Grated Ginger to taste
Add pineapple chunks and marinate for 2-4 hours before baking at 425 for 30 minutes |
Serve with roasted potatoes in an olive oil and pineapple juice glaze |
